Do you even know what a pine nut is?
Turns out they come from pine cones (too obvious?) and people have been eating them since the Paleolithic era.
Just like other nuts, they come with healthy fats and antioxidants..and are crunchy and delicious. Just ask the Italians, they love to use them in pastas, pesto, and more.
Or make this simple side dish and see for yourself.
INGREDIENTS
- 3 pounds spinach
- 2 teaspoons olive oil
- 2 tablespoons pine nuts, toasted
- 1 teaspoon garlic, minced
- to taste freshly ground black pepper
DIRECTIONS
- Wash spinach allowing water to cling to leaves.
- Heat oil in skillet over medium-high heat.
- Cook spinach until it wilts in skillet over medium-high heat, about 3 minutes.
- Add pine nuts, and garlic and cook for 2 minutes.
- Season with pepper and serve.
